Recipe (Maple Grilled Salmon)
Western maple grilled salmon
1 large fillet of salmon cut into (4-6) 6-8 oz portions
1 inch piece of fresh ginger (minced)
2 cloves of garlic (minced)
90 mls soy sauce.
30 mls olive oil
45 mls maple syrup or substitute can be
(honey)
15mls ground Smoking Gun Black peppercorns, (yo ho rum)
1: Place all ingredients into a stainless steel bowl and let it marinade up to 24 hours.
2: When ready, take fish out of marinade, pat dry on paper towel, preheat grill to 500 degrees
3: Oil the grill well before placing the salmon on it, and turn the heat right to low, cook for 3-5 minutes per side
4: leave the fish alone until it doesn’t want to stick to the grill, some charring may occur, that’s ok, baste with the marinate, maintain a low heat and watch for burning, there is a lot of sugar in the marinate so it is prone to browning.
5: Rest salmon, and place on cauliflower purée with sautéed spinach and mushrooms.
